| Tuscan Pecorino | Fresh Porcini Mushrooms | Wild Boar Salame |
The whole of Italy is known for its age-old culinary and wine-making traditions and each region has its unique attractions. The Maremma is no exception, offering some of the world’s finest wines (Brunello di Montalcino, Morellino di Scansano) and some intriguing newcomers, such as the wines of Montecucco. And of course the Chianti region is just up the road. On the food front, this is one of Italy’s best pecorino cheese producing regions; the local extra virgin olive oil is amongst the most sought-after; cinghiale (wild boar) roam in the woods, resulting in a number of specialities from sauces for pasta (in particular with the wide ribbons of paparedelle) to savoury salame and sausages. |
It's also a region famous for its mushrooms – fresh porcini and tartuffi (truffles), both white and black. And with the sea nearby, there is no shortage of fresh fish and seafood. Local specialities include acquacotta – a hearty vegetable soup thickened with bread, faraona ripiena di salsicia di cinghiale, pheasant stuffed with wild boar sausage and tortelli ripieni di bietola e ricotta con sughi di carne, ravioli stuffed with chard and ricotta cheese with a meat sauce. There are also plenty of excellent, local vegetarian dishes for non-meat lovers. |
